HOW TO MAKE PAVLOVA

How to make pavlova

Ingredients

  • 8 free-range egg whites
  • 400g castor sugar
  • 4 tsp corn flour
  • 2 Tbsp white wine vinegar
  • 400ml fresh cream, whipped
  • fresh berries, to garnish
  • icing sugar, for dusting

Cooking Instructions

1. Pre-heat the oven to 150°C.

2. Draw a circle, 25cm in diameter, onto a sheet of baking paper and use it to line a baking tray.

3. Whisk the egg whites until soft peaks form, then slowly add the caster sugar, 1 Tbsp at a time, whisking until stiff peaks form.

4. Sprinkle the cornflour and vinegar over the egg whites and fold in lightly, using a metal spoon.

5. Spoon the mixture onto the circle on the baking paper and, using a spatula, flatten the top and smooth the sides.

6. Bake for 1 hour. Turn off the oven and allow the meringue to cool in the oven completely.

7. Top the cooled meringue with the whipped cream, garnish with berries and dust with icing sugar.
